We should be able to group these into categories, similar to what is currently on the home page (https://fredhutch.github.io/VISCfunctions/index.html) with improvements from Claudio in #118
I think this would allow us to simplify the README/home page, and it would make it easier to ensure the list of everything available in the package is always up-to-date and easy to navigate.
