If you give me more detail on what you are attempting I can give better guidance. You should be able to use the KConfig system to modify this. There is an option BOOT_UI_MENU_DISABLED that will disable the boot menu. For boot logs are you asking about the serial logs? If so, the release build should have those disabled.

Depending on what you are attempting the minimal style builds might be closer to what you want.
