homebrew version mismatch #717

When installing brew install chainhook:

Homebrew reports installing v1.9.0
The binary reports v1.8.0 when running --version
But the behavior matches v1.9.0 (requiring the signer database)

brew install chainhook
Warning: chainhook 1.9.0 is already installed and up-to-date.
chainhook --version
chainhook 1.8.0
