Full org-doc refresh after the Railway + Neon deploy landed. Adds a new DEPLOYMENT-HISTORY.md that tells the story of how we shipped (decisions, branching model, the three real bugs we hit and fixed, current live state, redeploy/rollback flow, access). Updates the RAILWAY-DEPLOYMENT runbook with the missing PORT=8000 requirement, the Discord command registration step, and the first-admin seeding step. Rewrites both services' DEPLOYMENT.md around the Railway model — keeping the still-relevant security posture, key management CLI, audit log guidance, and pruning the systemd/Caddy/nginx VPS content. Root README + service READMEs get updated deploy status, links to the new docs, and stale tree-diagram fixes. Also picks up the .DS_Store gitignore additions.
