docs: fix broken star history chart in READMEs - #496

The star history chart no longer renders due to GitHub stargazer API restrictions. Point all README star history charts to a working provider that does not require an API token, and update the wrapping links to the matching hash-based URLs.

The star history chart in the READMEs is currently broken because the stargazer data source no longer works reliably. This change switches all star history charts and their wrapping links to a provider that works without an API token, so the charts render correctly again across every package README.
