fix: update the deprecated VS Marketplace Shields.io badges to Badgen ones

Hi! 👋

The VS Marketplace Shields.io badges have been deprecated and are no longer showing the expected values. This PR switches them over to Badgen, a similar service that's under active development. I also looked into VSMarketplaceBadges, but it hasn't been updated in 4 years, so I figured Badgen would be a better bet.
