The delete, update, merge-insert, and compaction bindings already shipped, but their roadmap rows were never ticked. Tick all four — naming the function that delivers each — plus statistics export, which lands with the new lance_dataset_calculate_data_stats() binding.

Ticks the Phase 3/4 roadmap rows whose bindings already shipped but were never
marked complete — delete, update, merge-insert, and compaction — naming the
function that delivers each.
Also ticks "Statistics export", which lands with #47
(
lance_dataset_calculate_data_stats); merge that one first so the row staysaccurate.
