Update defaultDataSets for D121 and D110

This PR proposes a simple update of the default datasets used for pile-up and as GEN-SIM inputs for D121 and D110 workflows. This might help with a few crashes observed due to #49763 and documented in #49795. It's not super clear to me.

I'm opening this just for testing at the moment, since evidence is pointing towards Run4 geometries being "bugged" from #49763 on. So we wouldn't want bad samples to become the defaults.
